Apricot Oat Bars
We made some really yummy, pretty healthy, kid-approved Apricot Oat Bars. The apricot version is amazing, but the original recipe from Cook with Amber used peaches which I'm sure are yummy too. Enjoy!
Instructions
- Dice dried apricots and combine with apricot jam in a small bowl.
- Combine flour, sugar, cinnamon, salt and baking soda in a large bowl.
- Add oats and mix. Once combined, add melted butter, vanilla, and the beaten egg. Mix thoroughly.
- Lightly oil a 9x13 baking dish and place parchment paper as shown in the video.
- Place 3/4 of the oat mixture in the pan, distribute evenly, and then press firmly into the pan.
- Spread the fruit mixture evenly over the base, then lightly top with the remaining oat mixture.
- Place in a 350 degrees F. oven for 35 minutes.
- Remove and let cool completely (30-45 minutes) before cutting into bars of whatever size you'd like.

½ cup dried apricot
1¾ cup all-purpose flour
¾ cup light brown sugar
1 tsp ground cinnamon
¾ tsp salt
¾ tsp baking soda
1¾ cup old-fashioned rolled oats
1 cup unsalted butter, melted
1 tsp vanilla extract
1 egg
