Apricot Oat Bars

We made some really yummy, pretty healthy, kid-approved Apricot Oat Bars. The apricot version is amazing, but the original recipe from Cook with Amber used peaches which I'm sure are yummy too. Enjoy!

Instructions

  1. Dice dried apricots and combine with apricot jam in a small bowl.
  2. Combine flour, sugar, cinnamon, salt and baking soda in a large bowl.
  3. Add oats and mix. Once combined, add melted butter, vanilla, and the beaten egg. Mix thoroughly.
  4. Lightly oil a 9x13 baking dish and place parchment paper as shown in the video.
  5. Place 3/4 of the oat mixture in the pan, distribute evenly, and then press firmly into the pan.
  6. Spread the fruit mixture evenly over the base, then lightly top with the remaining oat mixture.
  7. Place in a 350 degrees F. oven for 35 minutes.
  8. Remove and let cool completely (30-45 minutes) before cutting into bars of whatever size you'd like.
