Everything Orange Soup
Everything Orange Soup – a fun, simple, and delicious soup! We didn’t add any cream or coconut milk to this batch, but either adds a yummy richness to the soup. And, don’t forget the ginger, despite being yellow, it’s the start of this soup...just don’t tell the cinnamon!
Instructions
- Chop onion, celery, and carrots into equal sized pieces.
- Heat olive oil in a large sauté pan on medium heat. Once at temperature, add onion, celery, and carrots. Cook stirring frequently until the onion becomes translucent.
- Meanwhile, peel and chop sweet potatoes, butternut squash and apple. Add to onion mixture along with enough stock or water to cover ingredients.
- Add orange juice, ginger, cinnamon, and salt and pepper.
- Bring to a boil.
- Reduce heat to medium-low and simmer for 30 minutes.
- Remove from heat, and add coconut milk.
- Using an immersion blender, pulse soup until desired consistency, we like smooth without chunks. A stand-blender can work. Make sure to vent the pitcher or wait until soup has completely cooled before blending.
- Taste and adjust to your preference.

1 small butternut squash

½ cup orange juice
1 5.5 oz can coconut milk (optional not in video)
2 tsp grated ginger
1 tsp cinnamon
