Falafel (Chickpea) Burger | Part of Burger Week

Chickpeas, neither chicks nor peas, but they are delicious! We knew our Falafel Burger was good, but paired with our Tahini Sauce, it really stood out as an amazing dinner option. Can’t wait to make these all summer long!

Instructions

  1. Rinse chickpeas under cold water.
  2. Zest lemon and juice ½ for fresh juice.
  3. Place the chickpeas in a food processor.
  4. Add lemon zest, juice, onion, egg, cumin, and coriander.
  5. Pulse a few minutes in order to mix all the ingredients. You want to break all the chickpeas down but, you don’t want to turn them into a paste.
  6. Transfer to a large bowl.
  7. Add ⅔ cup breadcrumbs and mix until combined.
  8. Divide mixture into 4 and form burger patties.
  9. Coat with remaining bread crumbs and let rest in the fridge for 15 minutes.
  10. Preheat a frying pan over medium-high heat.
  11. Add oil and fry the patties for 4-6 minutes per side.
  12. Serve as burgers or standalone patties.
