Healthy Pumpkin Oatmeal Cookies
Yummy Healthy Pumpkin Oatmeal Cookies! These are really, really great cookies for this time of year and a super easy recipe too! So much flavor in a little bite. We’ll be making these again for sure and you should too!
Instructions
- We recommend you make your own pumpkin puree, but use the canned stuff if you’re short on time.
- Preheat the oven to 350°F.
- Line 2 baking sheets with parchment paper.
- In a medium bowl mix together egg, vanilla, and pumpkin until well combined.
- In a separate large bowl, combine remaining ingredients.
- Once mixed, fold the wet ingredients into dry until just combined, do not overmix.
- Using a cookie scoop or a couple spoons, form cookies and place them on the baking sheet. Flatten the dough or leave them round to be more like bites.
- Bake cookies for 12-14 minutes until lightly browned.
- Cool cookies on the sheet for a few minutes before transferring to a cooling rack to cool for another few minutes before enjoying them!

½ cup pumpkin puree (not pumpkin pie filling)
1 large egg
1 tsp pure vanilla extract
¾ cup all-purpose flour
1½ cup rolled oats
¼ cup sugar
¼ cup packed light brown sugar
¼ tsp baking powder
½ tsp baking soda
¼ tsp salt
1½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground cloves
½ cup chocolate chips
½ cup dried cranberries
