Healthy Pumpkin Oatmeal Cookies

Yummy Healthy Pumpkin Oatmeal Cookies! These are really, really great cookies for this time of year and a super easy recipe too! So much flavor in a little bite. We’ll be making these again for sure and you should too!

Instructions

  1. We recommend you make your own pumpkin puree, but use the canned stuff if you’re short on time.
  2. Preheat the oven to 350°F.
  3. Line 2 baking sheets with parchment paper.
  4. In a medium bowl mix together egg, vanilla, and pumpkin until well combined.
  5. In a separate large bowl, combine remaining ingredients.
  6. Once mixed, fold the wet ingredients into dry until just combined, do not overmix.
  7. Using a cookie scoop or a couple spoons, form cookies and place them on the baking sheet. Flatten the dough or leave them round to be more like bites.
  8. Bake cookies for 12-14 minutes until lightly browned.
  9. Cool cookies on the sheet for a few minutes before transferring to a cooling rack to cool for another few minutes before enjoying them!
