Perfect Scones

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a food processor, and yes you kind of need a food processor, add flour, sugar, baking powder and salt. Blend for a couple pulses.
  3. Add the cold butter and pulse a few times. You are looking for a consistency which resembles cornmeal. Don’t over mix or you will melt the butter.
  4. Add mixture to a large bowl and stir in lemon zest.
  5. Add the vanilla to your milk, then add the wet ingredients, and blueberries (for a full batch of blueberry) to the dry. Carefully mix with a spoon or your hands until you are able to form a dough ball.
  6. Divide the dough into two equal balls, add blueberries to half if you’re looking for a mixed batch.
  7. Flatten the dough balls with your hands to form 6-7 inch discs of an even thickness.
  8. Cut, like a pizza, into 8 equal sized pieces.
  9. Bake for about 15-18 minutes or until golden brown. Keep an eye on the bottom as they may burn if over cooked.
  10. Serve warm with whipped butter and your favorite jam!
