Strawberry Oat Bars

Another bar recipe, this week Strawberry Oat Bars, and made with fresh strawberries! So yummy and pretty healthy really, it has just the right amount of sweet. Good as dessert or breakfast...sure, why not! Don't have fresh strawberries? I'm sure frozen would work or try some blueberries instead! Try these today, you'll be glad you did!

Instructions for the Dip

  1. Preheat the oven to 375°F and line an 8x8-inch baking pan with parchment paper.
  2. In a medium bowl, combine flour, oats, and sugar, then add cinnamon and salt. Once combined, add melted butter and mix.
  3. Reserver ½ cup of the oat mixture for a topping later.
  4. Press the remaining oat mixture into an even layer in your baking pan and set aside.
  5. If using fresh strawberries, thoroughly wash them, and cut them into bite-sized pieces, normally into 4.
  6. In a medium bowl, coat strawberries with sugar and cornstarch followed by the lemon juice and ensure all pieces are evenly coated.
  7. Add strawberries to the oat layer then top to the reserved oat mixture ensure you have an even layer.
  8. Bake in the oven for 30 minutes.
  9. Remove and let cool for a few hours. If pressed for time you can put them in the fridge.
  10. While they’re cooling, in a small bowl, mix powdered sugar, milk, and vanilla.
  11. Before cutting it into bars, drizzle the sugar glaze over the top.
  12. Cut into 9, 12, or 16 pieces. They could last in the fridge for a least a few days, but good luck not finishing them the first night!
