Healthy Zucchini Brownies

Healthy isn't a bad word and these healthy brownies are truly awesome. These make an amazing low sugar dessert or snack and they are a great way to get some extra vegetables into everyone’s diet without compromising any taste or flavor! Tag us on Instagram if you make them.

Instructions

  1. Line an 8 x 8 inch baking dish with parchment paper and preheat the oven to 375 degrees F.
  2. Grate zucchinis and let rest in a fine mesh-strainer.
  3. Mix egg, coconut oil, maple syrup, and vanilla in a large bowl.
  4. Once combined, add cacao powder (carefully), baking soda, and salt. Mix until all ingredients are blended.
  5. Place zucchini on a couple sheets of paper towel, gather it into a ball and gently squeeze out some of the extra juice.
  6. Add zucchini to the mixture and combine.
  7. Finally, add flour and mix until just combined, careful not to over mix at this stage.
  8. Transfer the mixture to your prepared pan and bake for 25 minutes. Don’t over bake them like we did. You’re done when the brownies look like cake that needs another 5 minutes to be ready.
  9. Cut into at least 16 pieces and enjoy!
