Black Bean Burger | Part of Burger Week

Burger Week continues with our first vegetarian option, a yummy Black Bean Burger. This one has a little heat, maybe even too much but it’s still delicious. As with both our veggie options, these are simple and quick to make. We fry them, but cooking them in the oven is absolutely an option.

Instructions

  1. In a food processor, finely mince the onion, bell pepper, cilantro, and garlic.
  2. Place vegetable mince in a fine mesh strainer to extract excess liquids. Complete by placing the vegetable mince on some paper towel and squeeze out any remaining moisture.
  3. Rinse beans under cold water, then dry with paper towel.
  4. With the back of a fork, mash the beans but stop before turning them all the beans into a paste.
  5. Combine beans, vegetables, spices, and egg. Mix well.
  6. Add ⅔ cup of bread crumbs and mix.
  7. Divide mixture into 4 and form burger patties.
  8. Coat with remaining bread crumbs and let rest in the fridge for 15 minutes.
  9. Preheat a frying pan over medium-high heat.
  10. Add oil and fry the patties for 4-6 minutes per side.
  11. Serve as a burger or as is.
