Cauliflower Mac & Cheese

Mac & Cheese with Cauliflower! The great family classic with a little bit more...more vegetable, more flavor, and more creaminess. Like pizza (which we made last week), there are so many mac & cheese variations, and everyone is yummy in its own way. This recipe is quick, easy, and sure to please the whole family, try it this week!

Instructions

  1. Place a large pot filled halfway with water on high-heat. Add salt and bring to a boil.
  2. Preheat the oven to 350°F.
  3. While waiting for water to boil, cut cauliflower into small florets.
  4. Once water’s boiling, add pasta. Cook according to package directions, normally 8-12 minutes. Add cauliflower at the midpoint (4-6 minute mark).
  5. While pasta’s cooking, shred both kinds of cheese and finely chop the onion.
  6. In a large bowl, mix cheese, sour cream, mustard, onion, and salt & pepper to taste.
  7. Strain pasta and cauliflower. Add to the cheese mixture and incorporate.
  8. Transfer mixture to a 9x12 baking pan.
  9. Top pasta mixture with breadcrumbs. Put in the oven for 30 minutes.
  10. Remove from the oven and let cool for 5 minutes.
